Here are a few of the recipes that helped me lose the weight! They are easy to cook and taste great! Let me know what you think!

Leek and Potatoe Soup

Potatoes make a great base for a soup because they boil down to a thick and creamy consistency.

1 Small Onion, Chopped
450g Leeks, Sliced
450g Potatoes, Diced
500ml Skimmed or semi skimmed Milk
500ml Water
1 tablespoon of mixed herbs, fresh or ground

Method
Seal the onion, leeks and potatoes.
Pour in the skimmed milk and 500ml water, add the herbs and season with salt and pepper.
Bring to the boil, cover and simmer gently for 20 minutes.

Black Bean Burgers

1 large can black beans (or any other kind of beans for that matter)
1 diced onion
1 diced red pepper
1/2 teaspoon ground cayenne pepper
1 egg
1 cup seasoned bread crumbs
2 tablespoon fresh chopped cilantro

Method
Rinse black beans. In a large bowl, mash black beans then add onion, bell pepper, cayenne pepper, egg, bread crumbs and cilantro. Blend until all ingredients are mixed well. Form bean mixture into patties and place on a non stick baking tray and bake at 180 for 10 mins. Makes six burgers.

Fish and Prawn Curry

1lb (450g) prawns unpeeled
12oz (340g) cod or monkfish
1 onion
2 cloves of garlic
1 small red chili
1tsp(5ml) turmeric
1tsp(5ml) coriander
2tsp (10ml) tomato puree
3oz(75g) frozen peas

Method
Peel prawns, skin fish and cut into chunks. Peel onion and slice. Peel garlic and crush. Deseed and slice chili. With a small amount of oil in a pan, stir in onion, garlic and chili and cook for 2/3 minutes. Stir in turmeric, coriander, cook for 2 minutes, and be very careful as this can burn very quickly. Add tomato puree, and ½ pint (300ml) water. Bring to boil. Reduce heat, then stir in fish, prawns, peas and simmer for 10 minutes.

Serve on a bed of rice.

Charlie's Tomato Salsa

1 lb. (2 large) fresh tomatoes, seeded and diced
1/2 chopped onion
olives
2 Tbsp. lemon juice
2 garlic cloves, finely chopped
3 Tbsp. chopped fresh basil
1/2 red pepper
1/4 tsp. salt
1/8 tsp. ground black pepper

Method
In a medium bowl, combine tomato, onion, pepper and olives. In a small bowl, whisk together lemon juice, garlic, basil, salt, black pepper. Gently mix dressing with tomato mixture. Why not add some chilli or curry powder to give it a kick!

Ground Corriander
Tumeric
Ground Cumin
Glove of Garlic
Red, Yellow and Green Pepper
2 x Onions
1 Tin Chopped Tomatoes
1 Tin of Red Kidney Beans
A Jar of Tomato Paste
4 x Fresh Chillis
Worcestershire Sauce
Salt
Pepper
One Pound of Turkey Mince

Method
Chop the onions, chilli and peppers and garlic and place in a thick bottomed pan. Brown them off and then add the Turkey mince. Seal the mince and then add the tomatos, tomato paste, a little salt, pepper, cumin, turmeric and a dash or two of Worcester sauce.

Add beans, add some water to prevent burning and season as preferred (salt, pepper, herbs and coriander). Cook for 10 minutes then place in a casserole dish and put into a preheated oven on 170c / 325 f gas mark 3 - for an hour and a half.
Serve and enjoy. If you are cooking for only one or two people, why not get some Tupperware boxes and freeze individual portions for another day.

Mum’s Tip
If cooking in oven why not pop a potato into bake or maybe even a dish of wholegrain rice. My mum does her rice in such a wonderful way to make it nice and dry and fluffy. Put half a cup of rice into pan with a cup of water and bring to boil when almost dry squeeze some lemon on the rice and place in the oven for beautiful and effortless rice every time!

Regency Fish Pie.

This is a very low fat and very cheap meal to make.

2 tins of pilchards in tomato sauce
2 pounds of potatoes (1 KG)
Spices and herbs

Method.
Boil the potatoes and then leave to one side. Mash two tins of pilchards (drained) into a deep bottom dish (place the tomato sauce to one side). Mash potatoes and place on top of the mashed pilchards. Bake in the oven for 45 mins on a moderate heat. Add curry power and spices (and herbs) to the tomato sauce to make a light and tasty curry.
